Indulge in a delightful dish of jammy eggs swimming in a flavorful seafood boil-inspired sauce.
Ingredients:
  • 4 large eggs
  • 2 tablespoons unsalted butter
  • 0.25 cup minced white onion
  • 1 clove garlic, minced
  • 1 tablespoon hot sauce
  • 1 teaspoon seafood seasoning (such as Old Bay®)
  • 0.5 cup low-sodium chicken broth or vegetable broth, or water
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons finely chopped fresh parsley, plus more for garnish
Instructions:
  • Fill a small pot halfway with water and bring to a boil. Gently add the eggs and boil for 6 minutes. Remove from heat and let them rest for 1 minute. Transfer the eggs to a bowl of ice water and cool for 3 minutes.
  • In a small skillet over medium-low heat, gently melt the butter. Sauté the onion until softened and fragrant for 3 minutes. Add garlic and cook until golden and aromatic, stirring occasionally for 2 minutes. Mix in hot sauce, Old Bay seasoning, and chicken broth, simmer for 4 minutes until slightly reduced. Remove from heat and stir in lemon juice and parsley.
  • Peel the eggs and arrange in a serving bowl, then generously pour sauce over the eggs and sprinkle with the remaining parsley for a beautiful presentation.
