Mediterranean style fish with olive oil, lemon, garlic, feta, and spinach. Juicy and flavorful!
Ingredients:
  • 2 teaspoons olive oil
  • 0.25 cup chopped onion
  • 1 clove garlic, minced
  • 2 (9 ounce) bags fresh spinach
  • 0.25 cup sliced kalamata olives
  • 2 tablespoons crumbled feta cheese
  • 0.5 teaspoon grated lemon rind
  • 0.5 teaspoon salt
  • 0.25 teaspoon dried oregano
  • 0.125 teaspoon white pepper
  • 1 pound tilapia fillets
  • 2 tablespoons butter, melted
  • 2 teaspoons lemon juice
  • 1 pinch paprika, or to taste
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • In a large skillet over medium heat, sauté onion and garlic in olive oil until onion is soft, approximately 5 minutes. Add spinach and cook until wilted, about 5 minutes. Mix in olives, feta cheese, lemon zest, salt, oregano, and white pepper. Continue cooking until feta melts and flavors meld, around 5 minutes.
  • Spread a luscious layer of spinach mixture in the baking dish. Gently place the tilapia fillets on top. Combine butter and lemon juice, then drizzle this zesty mixture over the fish. Finish by sprinkling paprika for an extra kick.
  • Place the fish in the preheated oven and bake until the flesh turns opaque and flakes easily, for about 20 to 25 minutes.
