Baked tilapia with pesto butter, veggies, and white wine in a simple but impressive parchment packet.
Ingredients:
  • 1 stick unsalted butter, softened
  • 1 tablespoon basil pesto
  • 7 sheets parchment paper
  • 2 medium red potatoes, cut into thin strips
  • 1 yellow squash, cut into thin strips
  • 1 yellow onion, diced
  • 2 tablespoons olive oil
  • 6 tilapia fillets
  • 1 pinch sea salt and ground black pepper to taste
  • 6 tablespoons white wine
Instructions:
  • Combine butter and basil until well mixed. Shape into a log on parchment paper, then refrigerate until firm, approximately 4 hours.
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine the potatoes, squash, and onion in a bowl.
  • Take each parchment paper sheet and transform it into a 15-inch square. Fold it in half and trim the edges to form a semi-circle. Open it up and place a generous handful of mixed vegetables on one side of each semi-circle.
  • Drizzle each tilapia fillet with 1 teaspoon of olive oil, then season with salt and pepper. Place fillets over the vegetables and add more salt and pepper to taste. Top each fillet with a couple slices of pesto butter and 1 tablespoon of white wine.
  • Fold the parchment paper over the tilapia and vegetables like a quesadilla, sealing by twisting the edges of the semi-circle. Place on a baking sheet.
  • Bake the tilapia in the preheated oven for about 20 minutes until it flakes easily with a fork. Carefully open the parchment paper and serve.
