Whip up quick and fresh mini taco dips with avocado, tomato, sour cream, and cucumber for a lively Mexican-inspired side dish. Ideal for any party in just 20 minutes!
Ingredients:
  • 2 avocados, roughly chopped
  • 1 green onion, finely chopped
  • 21.00 gm lime juice
  • 117.50 gm light sour cream
  • 5.00 gm salt-reduced taco seasoning
  • 20.00 ml chopped fresh coriander
  • 125.00 ml mild tomato salsa
  • 2 tomatoes, seeded, finely diced
  • 1 Lebanese cucumber, seeded, finely diced
  • 125.00 ml finely grated tasty cheese
  • 45g packet corn chips, to serve
Instructions:
  • Combine ripe avocado, fresh onion, and zesty lime juice in a bowl. Mash until creamy.
  • Combine sour cream, taco seasoning, and coriander in a bowl.
  • In clear serving cups, layer guacamole followed by salsa, then spoon over sour cream mixture. Finish with tomato, cucumber, and cheese. Serve with corn chips.
