Versatile casserole dish, perfect as a side or main meal.
Ingredients:
  • 1/2 cup uncooked barley
  • 1 3/4 cups vegetable broth
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh mushroom
  • 1/4 cup chopped carrot
  • 1/4 cup chopped green bell pepper
  • 1 tablespoon chopped fresh dill weed or 2 teaspoons dried dill weed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 medium green onions, chopped (1/4 cup)
Instructions:
  • Preheat oven to 350°F. Grease a 10-inch skillet and a 2-quart casserole dish with cooking spray. Toast barley in the skillet over medium heat for about 8 minutes, stirring constantly, until it turns light brown.
  • Combine all remaining ingredients, excluding the green onions, and bring to a boil. Transfer the mixture into a casserole dish.
  • Cover and bake for approximately 50 minutes, or until the vegetables are tender. Before serving, sprinkle with chopped green onions for a pop of fresh flavor.
