Ingredients:
  • Cracked black pepper
  • 36.40 gm olive oil
  • 2 red onions, finely sliced
  • 30.00 ml balsamic vinegar
  • 8.00 gm brown sugar
  • Salt
  • 2 chicken breast fillets
  • 8 x thick slices ciabatta bread
  • 1 bunch rocket, washed and trimmed
  • 4 slices Swiss cheese, halved
  • 2 vine-ripened tomatoes, sliced
  • 82.50 gm egg mayonnaise
Instructions:
  • In a small frying pan over medium heat, heat 1 tablespoon of olive oil. Add the onions and cook for 8 minutes, stirring often, until they turn golden. Stir in vinegar, sugar, salt, and pepper, and cook for an additional 3-4 minutes until caramelized. Transfer to a bowl.
  • Slice the chicken in half horizontally. Heat the remaining oil in the same pan over low to medium heat. Cook the chicken for 4 minutes on each side or until it's cooked through. Remove from heat and allow it to cool.
  • Toast the bread until golden brown, then layer it with rocket, cheese, tomatoes, chicken, and onion. Drizzle with mayonnaise and finish by placing the remaining bread on top.
