Toblerone mousse tarts

Indulgent Toblerone inspired dessert.
Ingredients:
  • 200g packet malt biscuits
  • 150g butter, melted
  • 100g dark chocolate, chopped
  • 100g milk chocolate, chopped
  • 378.75 gm thickened cream
  • 50g Toblerone, finely chopped, plus extra chopped
  • Toblerone, to serve
Instructions:
  • Pulse biscuits into fine crumbs, then add butter and pulse until mixed. Press mixture onto base and sides of 12 x 2cm-deep, 6cm round loose-based fluted flan tins. Chill in the fridge for 30 minutes.
  • In a microwave-safe bowl, combine dark and milk chocolate with 1/3 cup cream. Microwave on HIGH for 1 to 2 minutes, stirring halfway, until smooth. Allow to cool for 15 minutes before using.
  • With an electric mixer, whip the remaining cream and honey until they form soft peaks. Gently fold half of the whipped cream into the chocolate until just mixed. Add Toblerone and refrigerate the rest of the cream mixture.
  • Portion the mousse into individual cases and chill for 30 minutes or until firm. Unmold the tarts and spoon over the rest of the cream mixture. Garnish with extra Toblerone and serve.
