Try delicious toffee grapes for a twist on a classic treat, perfect for pairing with cheese and bread on a platter.
Ingredients:
  • 1 bunch (about 100g) green grapes, washed, dried
  • 1 bunch (about 100g) black grapes, washed, dried
  • 215g (1 cup) caster sugar
  • 125ml (1/2 cup) water
  • Blue cheese, to serve
  • Cheddar, to serve
  • Brie, to serve
  • Water crackers, to serve
  • Baguette slices, to serve
Instructions:
  • Prepare 2 baking trays with non-stick baking paper. Cut grapes into clusters of 2-4 grapes using kitchen scissors.
  • In a heavy-based saucepan, mix sugar and water and stir over low heat until sugar dissolves. Increase heat to medium and boil gently without stirring. Occasionally brush down the sides of the pan with a water-dipped pastry brush for 12-15 minutes until golden. Let it sit until bubbles disappear.
  • Hold the grape cluster by the stem with tongs, dip it into the toffee mixture, ensuring it is evenly coated. Place the grapes on a tray. Repeat the process with the rest of the grapes and toffee. Allow them to sit for 10 minutes until the toffee sets.
  • Assemble toffee grapes alongside blue cheese, cheddar, and brie on a cheese board. Accompany with crackers and baguette for serving.
