Ingredients:
  • 4 pink grapefruit
  • 335g (1 1/2 cups) caster sugar
  • 250ml (1 cup) water
  • 1 tsp Angostura bitters
  • Thickened cream (optional), to serve
Instructions:
  • Prepare a baking tray with non-stick baking paper. Peel the rind from 1 grapefruit using a vegetable peeler. Remove the white pith with a small sharp knife and cut the rind into thin strips. Discard the remaining rind and white pith from the grapefruit.
  • In a medium saucepan, mix the sugar and water over low heat until the sugar completely dissolves. Add the rind strips and bring to a boil over high heat.
  • Lower the heat to medium and let it boil uncovered for 5 minutes without stirring. Use a fork to move the rind to the lined tray, spreading it out in a single layer. Set aside.
  • Uncover the syrup and let it boil for 5-10 minutes until it turns golden, brushing the sides of the pan occasionally with a wet pastry brush. Take the pan off the heat, stir in the bitters, and let it sit for 1 minute.
  • Place the grapefruit on heatproof serving plates, drizzle evenly with the toffee, and garnish with candied rind. Let it sit for 10 minutes until the toffee starts to dissolve. Serve with a dollop of cream on the side, if desired.
