Indulge your loved ones with a heavenly toffee and macadamia coffee cake.
Ingredients:
  • 1 2/3 cups Gold Medal™ all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/3 cup butter or margarine, softened
  • 1 cup milk
  • 1 egg
  • 1/4 cup English toffee bits
  • 1/4 cup flaked coconut
  • 1/4 cup chopped macadamia nuts
Instructions:
  • Preheat oven to 350° F and generously grease the bottom and sides of a 9-inch or 8-inch square pan with shortening.
  • In a large bowl, use an electric mixer to blend all ingredients except for toffee bits, coconut, and nuts on low speed for 30 seconds. Increase speed to medium and beat for 2 minutes, scraping the bowl occasionally. Fold in 2 tablespoons of toffee bits. Transfer the batter to the pan and top with the remaining 2 tablespoons of toffee bits, coconut, and nuts.
  • Bake for 32 to 35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely for about 1 hour.
