Irresistible toffee self-saucing pudding.
Ingredients:
  • 199.50 gm self-raising flour
  • 135.00 gm firmly packed brown sugar
  • 40g butter, melted
  • 169.95 gm milk
  • 82.50 ml macadamia nuts, chopped
  • 60g caramel lollies, halved
  • 375.00 gm boiling water
  • Icing sugar, to serve
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and grease an 8 cup-capacity oven-proof dish.
  • Sift flour into a bowl, then add 1/2 cup sugar. Create a well in the center and mix in butter and milk until combined. Gently fold in nuts and candies. Spread mixture into prepared dish and place on a baking tray.
  • Sprinkle the remaining sugar over the mixture, then delicately pour boiling water over the back of a large metal spoon onto the mixture. Bake for 40 to 45 minutes or until the top is set. Let it stand for 5 minutes before serving dusted with icing sugar.
