Deliciously nostalgic coconut bars that were a hit in the 1930s and 40s, bringing joy to our community.
Ingredients:
  • 0.5 cup packed dark brown sugar
  • 1 cup packed dark brown sugar
  • 2 tablespoons all-purpose flour
  • 1.5 cups coconut
  • 1 cup chopped walnuts
Instructions:
  • Preheat the oven to 325°F (165°C) while you grease a 9x13 inch baking pan.
  • Combine the shortening and 1/2 cup of brown sugar in a medium bowl, mixing until smooth. Add 1 cup of flour and salt, stirring until well blended. Press the mixture into the prepared pan.
  • Place the crust in the preheated oven for 15 minutes or until lightly golden. Once done, raise the oven temperature to 350 degrees F (175 degrees C).
  • Prepare the filling while the crust is baking. Combine 1 cup brown sugar, baking powder, and 2 tablespoons of flour in a medium bowl. Add eggs and vanilla, beat until thick and foamy. Gently mix in coconut and chopped nuts. Spread mixture over the warm crust.
  • Bake in the preheated oven for 25 minutes or until the bars are lightly browned and puffy. Let them cool completely before cutting into small bars.
