Create a delicious Greek salad medley with all your favorite ingredients.
Ingredients:
  • 80ml (1/3 cup) extra virgin olive oil
  • 4 rounds (14.5cm-diameter) pita bread, cut into 2cm-thick strips
  • 4 medium (about 175g each) vine-ripened tomatoes, cut into 1cm-thick slices
  • Salt & freshly ground black pepper
  • 4 green shallots, ends trimmed, thinly sliced
  • 100g pitted kalamata olives, halved
  • 150g Greek feta, crumbled
  • 20.00 ml red wine vinegar
  • 20.00 ml small fresh oregano leaves
  • 1 garlic clove, crushed
Instructions:
  • In a large non-stick frying pan over medium-high heat, warm 1 tablespoon of oil. Cook the pita strips for 1 minute per side until they turn golden brown and crispy. Place on a paper towel-lined plate to drain.
  • Distribute the tomato onto individual serving plates. Season with a pinch of salt and pepper. Garnish with green shallot, olives, and crumbled feta cheese.
  • In a screw-top jar, shake together the leftover oil, vinegar, oregano, and garlic until fully mixed. Drizzle the salad with the dressing, top with pita strips, season with pepper, and serve right away.
