Tomato, goat's cheese and poppyseed tartines

Vibrant tomato and goat cheese tartines with poppy seeds by Valli Little.
Ingredients:
  • 250g vine-ripened cherry tomatoes, divided into 4 bunches
  • 2 garlic cloves
  • 1 tsp chopped tarragon leaves, plus extra leaves to serve
  • 4.00 gm brown sugar
  • 20.00 ml balsamic vinegar
  • 120g soft goat's cheese
  • 20.60 gm milk
  • 20.00 ml poppyseeds
  • 4 slices sourdough bread
Instructions:
  • 1. Preheat the oven to 160°C. 2. Arrange tomatoes on a baking tray. 3. Combine sliced garlic, tarragon, sugar, vinegar, and oil in a bowl, whisk well. 4. Season the mixture and drizzle over the tomatoes. 5. Roast for 30 minutes until tomatoes are soft and starting to split.
  • Place the goat cheese, milk, and poppyseeds in a bowl. Season generously and mix well. Set aside.
  • Heat up your barbecue or chargrill pan on high. Brush the bread with oil and grill each side for 1-2 minutes until nicely charred. Rub the cut side of the remaining garlic clove on the bread. Spread with goat’s cheese mixture, add tomatoes on top, drizzle with roasting juices, and finish off by garnishing with extra tarragon leaves.
