Tomato, green olive, caper and pine nut salsa

Flavorful salsa for bruschetta or as a topping for grilled meats, veal cutlets, or polenta.
Ingredients:
  • 400g tomato medley
  • 60g (1/3 cup) Sicilian green olives, pitted, sliced
  • 20.00 ml baby salted capers, rinsed, drained, chopped
  • 40.00 ml pine nuts, lightly toasted
  • 40.00 ml fresh oregano leaves
  • 20.00 ml chopped fresh chives
  • 18.20 gm olive oil
  • 2 tsp red wine vinegar
Instructions:
  • Cut the tomatoes into halves or quarters based on their size, then combine them with olives, capers, pine nuts, oregano, chives, oil, vinegar, and season with salt and pepper in a medium bowl.
  • Mix gently until well combined and let sit for 10 minutes to enhance the flavors before serving.
