Italian-inspired tomato avocado salad with oregano, parsley, garlic, olive oil, vinegar, and seasoning.
Ingredients:
  • 3 to 4 fresh large tomatoes, sliced
  • Kosher salt
  • 1/2 red onion, thinly sliced
  • 2 avocados, peeled and cut into bite-sized chunks
  • 1/4 cup chopped fresh parsley
  • 1 garlic clove, minced
  • 1 teaspoons crumbled dried oregano, or 1 tablespoon chopped fresh oregano
  • Red wine vinegar (a good, strong red wine vinegar)
  • Extra virgin olive oil (the best quality)
  • Freshly ground black pepper
Instructions:
  • On a large serving platter, create a vibrant tomato base. Add a colorful layer of red onions and creamy avocado chunks. Top with a sprinkle of salt, fresh parsley, minced garlic, and crumbled oregano for a burst of flavor.
  • Drizzle the platter with red wine vinegar and olive oil, then sprinkle with a bit more salt and freshly ground black pepper. Serve right away or cover with plastic wrap and let sit at room temperature for 1-2 hours before serving. Avoid refrigerating.
