Vibrant and flavorful pasta dish that's quick and easy to make!
Ingredients:
  • 8 spicy Italian sausages (about 500g), cut into 3cm lengths
  • 2 large yellow capsicums, thinly sliced
  • 1 large red capsicum, thinly sliced
  • 1 tsp fennel seeds
  • 1/2 tsp dried chilli flakes
  • 2 x 400g cans whole tomatoes
  • 82.50 ml fresh oregano leaves
  • 400g spaghetti
Instructions:
  • In a large frypan over medium heat, heat oil until shimmering. Add sausages and cook for 5 minutes, turning occasionally until golden brown all over.
  • Sauté sliced capsicum until tender yet slightly crisp, stirring occasionally, for 2-3 minutes.
  • Toast fennel seeds and dried chilli for about 30 seconds until aromatic. Pour in the tomatoes with their juices and crush them gently with a wooden spoon. Cover and simmer for 5 minutes. Season with sea salt and pepper, then fold in oregano.
  • Cook the pasta in a large saucepan of boiling salted water until it is al dente, then drain.
  • Toss the sauce with the hot pasta delicately and serve promptly.
