Try our delicious one-pot sausage and rice for an easy family meal.
Ingredients:
  • 36.40 gm olive oil
  • 500g beef and cracked pepper sausages (see note)
  • 2 brown onions, halved, sliced
  • 1 red capsicum, cut into thick strips
  • 400.00 gm jasmine rice, rinsed
  • 400g can diced tomatoes
  • 637.50 gm chicken style liquid stock
Instructions:
  • In a large, heavy-based saucepan over medium-high heat, heat up 1 tablespoon of oil until shimmering. Add the sausages and cook for 5 minutes, turning frequently, until nicely browned. Transfer the sausages to a cutting board and slice them thickly.
  • Lower the heat to medium. Add the rest of the oil, onions, and capsicum to the pan. Sauté for 3 to 4 minutes until soft, stirring occasionally. Mix in the rice, tomatoes, stock, and sausages. Bring to a boil while stirring to combine.
  • - Cover the pan and simmer on medium-low heat for 10 minutes. Remove from heat and let it sit covered for 15 minutes to finish cooking the rice. Season with salt and pepper, then spoon into serving bowls and enjoy!
