Tomato 'relish'

Whip up a zesty tomato and red onion relish, healthy and flavorful.
Ingredients:
  • 1/2 small red onion, finely diced
  • 40.00 ml red wine vinegar
  • 5.00 gm caster sugar
  • 2 x 250g punnets cocktail truss tomatoes, halved
  • 20.00 ml fresh oregano leaves
Instructions:
  • In a bowl, combine onion, vinegar, sugar, and half of the oil. Season with salt and pepper. Let it sit for 30 minutes for the flavors to meld together.
  • Preheat your oven to 200C/180C fan-forced. Line a large baking tray with baking paper, then arrange tomato halves cut-side up. Drizzle with the remaining oil, season with salt and pepper, and roast for 12 to 15 minutes until slightly softened and caramelized.
  • Place the tomato onto a serving platter. Top with the onion mixture and sprinkle with oregano. Serve and enjoy!
