Irresistible tomato bacon spread perfect for sandwiches or eggs.
Ingredients:
  • 0.5 pound smoked bacon
  • 2 pounds ripe tomatoes, chopped
  • 1 yellow sweet onion, finely diced
  • 1 cup white sugar
  • 2.5 tablespoons apple cider vinegar
  • 1.5 teaspoons salt
  • 0.25 teaspoon black pepper
  • 1 dash hot pepper sauce (such as Tabasco®)
Instructions:
  • In a large skillet over medium-high heat, cook the bacon, turning occasionally, until evenly browned, for about 10 minutes. Place the cooked bacon on paper towels to drain. Once cooled, crumble the bacon.
  • Combine the tomatoes, sweet onion, sugar, apple cider vinegar, salt, black pepper, and hot sauce in a saucepan. Bring to a boil while stirring constantly to dissolve the sugar. Mix in the crumbled bacon and cook over medium heat, stirring frequently, until the spread thickens, about 1 hour. Adjust seasoning with salt and black pepper to taste.
  • Transfer the mixture into a 1-pint glass jar with a tight-fitting lid. Store in the refrigerator for up to 1 week or freeze for up to 2 months. If freezing, divide the spread into small jars and thaw in the refrigerator overnight before using.
