Parmesan-coated chicken nestled in pasta sauce topped with melted Monterey Jack cheese.
Ingredients:
  • 2 eggs, beaten
  • 1 cup grated Parmesan cheese
  • 7 ounces seasoned bread crumbs
  • 6 skinless, boneless chicken breast halves
  • 1 tablespoon vegetable oil
  • 12 ounces pasta sauce
  • 6 slices Monterey Jack cheese
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • Combine grated Parmesan cheese and bread crumbs in a shallow dish. Dip chicken breasts in beaten eggs, then coat with the bread crumb mixture.
  • Heat oil in a large skillet over medium-high heat. Cook coated chicken for 8 to 10 minutes on each side until golden brown and cooked through with clear juices.
  • In a lightly greased 9x13 inch baking dish, spread the tomato sauce. Top with chicken, then place a slice of Monterey Jack cheese on each breast. Bake in the preheated oven for 20 minutes or until the cheese is fully melted.
