Braised chicken thighs simmered with ripe tomatoes, garlic, ginger, and chili for a flavorful dish.
Ingredients:
  • 8 chicken thighs
  • 4 tomatoes, quartered
  • 8 cloves garlic, minced
  • 4 teaspoons minced fresh ginger root
  • 1 teaspoon chili powder
  • 1 pinch ground turmeric
  • 1 teaspoon salt
  • 0.5 teaspoon coconut oil
Instructions:
  • In a large, heavy pot over high heat, sauté chicken thighs with tomatoes, garlic, ginger, chili powder, turmeric, and salt until chicken starts to brown.
  • Lower the heat to medium-low and gently cook the chicken until it's tender, for approximately 45 minutes. Use an instant-read thermometer to ensure the temperature near the bone reaches at least 165°F (74°C). Serve by drizzling with coconut oil.
