Tomato jam

Ingredients:
  • 250g brown sugar
  • 500g ripe Gourmet tomatoes, roughly chopped
  • 2 large fresh red chillies, roughly chopped
  • 2 garlic cloves, chopped
  • 1 tsp freshly grated ginger
  • 42.00 gm light soy sauce
  • 100ml white vinegar
  • 1.20 gm sea salt
Instructions:
  • Combine the tomatoes, chillies, and garlic in a food processor and blend until just slightly chunky. Transfer the mixture to a saucepan.
  • Combine the ginger, soy sauce, sugar, vinegar, and salt in a pot and bring to a boil. Simmer, stirring occasionally, for 30-35 minutes until the mixture thickens and develops a glossy finish.
  • Transfer the warm jam into sanitized jars, flip upside down for 2 minutes, then allow to cool fully before refrigerating.
