Try making delicious tomato jam with ripe tomatoes from the market or garden. Perfect for sandwiches, burgers, or as a crostini topping!
Ingredients:
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 3 tablespoons olive oil
  • 1 medium onion, sliced
  • 2 garlic cloves, minced
  • 3/4 teaspoon smoked paprika
  • 1 teaspoon red wine vinegar
  • 1 1/2 pounds Roma tomatoes
  • 1/4 cup packed brown sugar
  • 1/8 teaspoon freshly ground black pepper
Instructions:
  • Toast the cumin and mustard seeds in a dry skillet over medium heat until they become aromatic, crackle, and pop, about 6 minutes. Don't forget to shake the pan occasionally.
  • In a skillet, heat olive oil with spices. Add onions, garlic, and paprika. Sauté for 10 minutes until onions are soft and red. Stir in red wine vinegar and cook for another 10 minutes, stirring occasionally.
  • Combine cored, halved, and de-seeded tomatoes with the onion spice mixture in a food processor. Pulse about 10 times until the mixture is uniform with a slight texture, avoiding over-processing into a smooth sauce.
  • Prepare the jam: Combine the tomato and onion mixture with brown sugar, salt, and pepper in a skillet. Simmer over medium heat until the liquid reduces and the jam reaches a thick consistency, approximately 15 minutes.
  • Enjoy or save: Enjoy immediately or place in a lidded container and refrigerate for 1 week. Serve chilled or warm. The jam is freezer-friendly for up to three months.
