Cheddar tomato rarebit over toast makes a cozy tea-time treat or hearty winter lunch. Add ham or sausage for a satisfying dinner with a side salad.
Ingredients:
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 0.75 cup milk
  • 0.125 teaspoon baking soda
  • 0.75 cup canned diced tomatoes
  • 0.25 teaspoon prepared yellow mustard
  • 1 cup shredded Cheddar cheese
  • salt and pepper to taste
Instructions:
  • In a heavy saucepan over medium heat, melt butter until smooth. Add flour and cook until lightly browned, about 10 minutes. Slowly whisk in milk until thickened and smooth while simmering. Remove from heat.
  • Combine baking soda with canned tomatoes, then mix into the sauce. Whisk mustard and eggs together, then incorporate into the tomato sauce. Place the saucepan over a pot of gently simmering water. Stir in the cheese and season with salt and pepper. Cook, stirring occasionally, until the cheese melts.
