Elevate your pasta bake with store-bought tortellini for a quick and delicious twist!
Ingredients:
  • 625g pack cheese and spinach tortellini
  • 1 brown onion, finely chopped
  • 200g prosciutto slices or bacon rashers, coarsely chopped
  • 1 garlic clove, crushed
  • 800g can diced Italian tomatoes
  • 44.40 gm tomato paste
  • 125.00 ml shredded parmesan
  • 40.00 ml chopped fresh basil
  • 220g bocconcini, torn into large pieces
  • Fresh basil leaves, to serve
Instructions:
  • Heat your oven to 200°C.
  • Boil pasta in a large saucepan of water until perfectly cooked. Drain and return to the pan.
  • Heat oil in a large frying pan over medium-high heat. Add onion and prosciutto, stirring occasionally for 4-5 minutes until onion is soft. Stir in garlic and cook for 30 seconds until aromatic.
  • Combine the tomato and tomato paste until warmed.
  • Combine the flavorful tomato mixture, savory Parmesan cheese, and fresh chopped basil with the pasta.
  • Mix until fully incorporated. Transfer the mixture into a large 3L baking dish, equivalent to a 12-cup capacity.
  • Add the bocconcini on top.
  • Bake for 20 minutes or until the cheese is golden and bubbly. Sprinkle with fresh basil leaves before serving.
