Tortellini and Cheese

Deliciously cheesy pasta dish that will satisfy your cravings!
Ingredients:
  • 1 package (9 ounces) refrigerated cheese-filled tortellini
  • 2 tablespoons butter or margarine
  • 2 small zucchini, cut lengthwise in half, then crosswise into 1/2-inch slices
  • 1 large onion, chopped (1 cup)
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 tablespoon chopped fresh dill weed or 3/4 teaspoon dried dill weed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups milk
  • 1 cup shredded Swiss cheese (4 ounces)
Instructions:
  • Prepare and cook the tortellini following the package instructions, then carefully drain them.
  • Heat butter in a 10-inch skillet over medium-high heat until melted. Add zucchini and onion, cook in the butter, stirring occasionally, until zucchini is crisp-tender, then reduce heat to medium.
  • Combine flour, dill weed, salt, and pepper into the mixture. Cook over medium heat, stirring constantly until it bubbles; then remove from heat. Gradually stir in milk and bring to a boil, continuing to stir. Boil and stir for 1 minute, then add cheese and stir until melted.
  • Gently incorporate tortellini; simmer until heated through.
