Ingredients:
  • 4 corn tortillas
  • 2 medium ripe tomatoes, finely chopped
  • 1 green shallot, ends trimmed, finely chopped
  • 22.20 gm tomato paste
  • 20.00 gm water
  • 2.25 gm sugar
  • 7.50 gm taco seasoning
  • 80g (1/3 cup) spreadable cream cheese
  • 37.60 gm sour cream
Instructions:
  • Preheat your oven to 180°C. Cut shapes from the tortillas using 4cm pastry cutters. Arrange them on a baking tray and bake for 5 minutes until crisp. Let them cool for 5 minutes before enjoying.
  • In a small saucepan over medium heat, mix together the tomatoes, green shallot, tomato paste, water, sugar, and 2 teaspoons of taco seasoning. Stir occasionally and cook for 10 minutes until the mixture slightly thickens. Remove from heat and let it cool for 10 minutes before using.
  • Mix cream cheese, sour cream, and the rest of the taco seasoning in a bowl.
  • Serve a delightful combination of tortilla chips with zesty tomato salsa and creamy cheese dip.
