Impress guests with this easy, delicious salad that doubles as a fancy dinner or simple lunch favorite.
Ingredients:
  • 1 can (11 oz) mandarin orange segments
  • 3 tablespoons seasoned rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1/8 teaspoon ground cinnamon
  • 5 cups bite-size pieces lettuce
  • 1 cup sliced fresh mushrooms (3 oz)
  • 1 cup canned bean sprouts, rinsed and drained
  • 1/3 cup sliced red onion
  • 2 teaspoons sesame seed, toasted
Instructions:
  • After draining the orange segments, saving 2 tablespoons of the liquid for the dressing, put the orange segments in a shallow glass or plastic dish. Shake the saved orange liquid, vinegar, honey, oil, and cinnamon in a tightly covered container until fully mixed. Pour the mixture over the oranges, cover, and chill in the fridge for at least 15 minutes.
  • Combine lettuce, mushrooms, bean sprouts, and onion in a large bowl. Drizzle oranges and dressing over the salad, gently toss to combine. Sprinkle with sesame seeds before serving.
