Delicious apple kugel made with egg noodles and apples in a creamy, sweet cream cheese base - perfect as a versatile dessert or side dish.
Ingredients:
  • 1 egg
  • 2 egg whites
  • 1 (16 ounce) package cottage cheese
  • 4 cups egg noodles
  • 1 (8 ounce) package cream cheese, softened
  • 0.25 cup brown sugar, or more to taste
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 2 firm, tart apples - cored, quartered, and thinly sliced
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and lightly grease an 8-inch square pan.
  • In a large pot, bring salted water to a boil. Add egg noodles and cook for about 5 minutes until al dente. Drain well.
  • Using an electric mixer, blend cream cheese and brown sugar in a bowl until smooth. Add cottage cheese, egg, egg whites, vanilla extract, cinnamon, and nutmeg and mix until well combined. Gently fold in noodles and apples by hand, then spread the mixture into the prepared pan.
  • Bake in the oven until the kugel is golden brown and set, for 45 to 50 minutes.
