Classic Mexican open-faced sandwich with refried beans, gooey melted cheese, and zesty salsa. Ideal for any meal or a quick and delicious bite.
Ingredients:
  • 4 bolillo rolls, sliced in half lengthwise
  • 3 tablespoons butter, room temperature
  • 1 (16 ounce) can refried beans, heated
  • 1 (7 ounce) package Borden® Southwestern Cheddar & Monterey Jack Shredded Cheese
  • Mexican salsa or pico de gallo, for serving
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and elegantly line a rimmed baking sheet with parchment paper.
  • Hollow out the middle of bread halves for extra toppings. Spread 1 teaspoon of butter on each half.
  • Layer 2 to 3 tablespoons of warm refried beans on bread. Sprinkle approximately 1/4 cup of Borden® Cheddar and Monterey Jack shredded cheese over the beans. Arrange bread halves on a baking sheet.
  • Bake until the cheese is melted and bubbly and the bread is crispy, about 15-20 minutes in a preheated oven.
  • Finish off the molletes with a generous dollop of zesty Mexican salsa or fresh pico de gallo.
