Traditional roast beef with veg recipe

Prepare a cozy winter feast with tender beef and savory vegetables.
Ingredients:
  • 1.3kg No Added Hormones Beef Roast Topside
  • 1kg baby white potatoes, halved or quartered
  • 450g gold sweet potato, peeled, coarsely chopped
  • 80ml olive oil
  • 200g green beans, trimmed
  • 20.00 ml chopped basil
  • 20.00 ml chopped flat-leaf parsley
  • 1 garlic clove, crushed
Instructions:
  • Preheat the oven to 250°C. Line a large roasting pan with baking paper, then arrange beef, potato, and sweet potato in the pan. Drizzle everything with half of the oil, making sure to coat the vegetables well. Don't forget to season generously before roasting.
  • Lower the oven temperature to 200°C. Continue roasting the vegetables, turning them halfway through, for 1 hour (or until the beef reaches an internal temperature of 60-65°C for medium doneness). Cover with foil and let it rest for 10 minutes before serving.
  • Place beans in a heatproof bowl and cover with boiling water. Let sit for 2 minutes until just tender, then drain well. Mix basil, parsley, garlic, and remaining oil in a small bowl.
  • Drizzle the beef with the fragrant basil mixture and serve alongside the beans and vegetables.
