British favorite: Cheddar cheese and beer sauce over toast, aka Welsh rarebit. Easy and delicious homemade version.
Ingredients:
  • 0.25 cup all-purpose flour
  • 2 teaspoons Worcestershire sauce
  • 0.5 teaspoon dry mustard
  • 0.5 teaspoon ground black pepper
  • 1 cup British beer
  • 1.5 cups heavy cream
  • 4 cups shredded sharp Cheddar cheese
  • 4 egg yolks
  • 8 slices bread
Instructions:
  • In a large saucepan over low heat, melt butter. Whisk in flour for 2 to 3 minutes, ensuring it doesn't brown. Add Worcestershire sauce, mustard, salt, and pepper, whisking until smooth. Incorporate beer, then pour in heavy cream and whisk until smooth. Gradually add Cheddar cheese, stirring constantly until melted and smooth, approximately 5 minutes.
  • Take the cheese sauce off the heat and allow it to cool for approximately 5 minutes, then briskly whisk in the egg yolks until fully combined.
  • Position the oven rack 6 inches below the heat source and preheat the broiler.
  • Toast one side of the bread slices until golden brown. Place the slices on a baking sheet with the toasted side down. Spread cheese sauce over the untoasted side.
  • Broil until the cheese sauce is bubbly and golden, for 2 to 3 minutes.
