Loaded cookies with oats, nuts, chocolate chips, and dried fruit burst with flavor.
Ingredients:
  • 0.5 cup applesauce
  • 0.5 cup brown sugar
  • 1.5 teaspoons vanilla extract
  • 2 egg whites
  • 1.25 cups all-purpose flour
  • 0.5 teaspoon salt
  • 0.75 teaspoon ground cinnamon
  • 1.25 cups quick cooking oats
  • 0.5 cup semisweet chocolate chips
  • 0.5 cup chopped walnuts
  • 0.33333331346512 cup dried cranberries
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease 2 baking sheets.
  • In a large bowl, mix together applesauce, white sugar, brown sugar, and vanilla. In a separate bowl, use an electric mixer to beat egg whites until frothy and beginning to firm up. Gently fold the egg whites into the applesauce mixture. Combine flour, baking soda, salt, and cinnamon, then fold into the egg mixture. Stir in oats, chocolate chips, walnuts, and cranberries. Drop by heaping teaspoons onto prepared baking sheets.
  • Bake cookies in a preheated oven until they are golden brown and set, which should take about 10 minutes. Transfer them to wire racks to cool as soon as they're out of the oven.
