Create irresistible gluten-free trail mix cookies loaded with seeds, nuts, and fruit for a delicious twist.
Ingredients:
  • 1 egg
  • 1 tablespoon coconut butter
  • 1 teaspoon vanilla extract
  • 0.75 cup white sugar
  • 0.33333331346512 cup gluten-free all purpose baking flour
  • 0.33333334326744 cup trail mix
  • 2 tablespoons tapioca starch
  • 0.25 teaspoon salt
  • 1 pinch ground nutmeg, or to taste
  • 1 pinch ground cinnamon, or to taste
  • 1 pinch ground ginger, or to taste
  • 1 pinch ground cloves, or to taste
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a baking sheet by lining it with either parchment paper or aluminum foil, then lightly oil the paper.
  • In a bowl, combine egg, coconut butter, and vanilla extract and whisk until smooth; add sugar and whisk until fluffy. Mix in flour, trail mix, tapioca starch, salt, nutmeg, cinnamon, ginger, and cloves until well combined. Drop teaspoonfuls of dough onto baking sheet, spacing 2 inches apart.
  • Bake in the preheated oven until the edges are golden brown, for about 7 to 10 minutes. Allow it to cool on the baking sheet until perfectly crisp, around 5 to 10 minutes.
