Tender pork marinated in sweet treacle, paired with crunchy coleslaw of Brussels sprouts and red onion.
Ingredients:
  • 2 (400g each) pork fillets
  • 53.20 gm treacle
  • 18.20 gm olive oil
  • 1 baguette, cut into 4
  • 75g mayonnaise
  • 5.90 gm mustard
  • 20.00 ml white wine vinegar or apple cider vinegar
  • 200g Brussels sprouts, thinly sliced
  • 1 red onion, thinly sliced
Instructions:
  • Preheat your oven to 180C. Brush the pork fillets with treacle, season them, and let them marinate for 10 minutes.
  • Heat the oil in an ovenproof frypan over medium heat until sizzling. Sear the pork for 5-7 minutes until golden brown, then finish cooking in the oven for 10 minutes until tender. Rest the pork loosely covered with foil for 5 minutes before thinly slicing.
  • In a bowl, mix mayonnaise, mustard, and vinegar. Add sprouts and onions, then season and toss everything together.
  • Divide the flavorful pork and juices over the slaw-filled rolls for a delicious serving.
