Tres leches cupcakes: a rich, decadent twist on the classic cake, soaked in three milks for ultimate indulgence.
Ingredients:
  • 2 eggs, separated
  • 0.5 cup white sugar, divided
  • 0.25 cup milk
  • 1 dash vanilla extract
  • 0.5 cup cake flour
  • 0.5 teaspoon baking powder
  • 1 pinch salt
  • 0.25 teaspoon cream of tartar
  • 1 (6 ounce) can evaporated milk
  • 0.5 cup heavy whipping cream
  • 0.5 cup sweetened condensed milk
  • 1 dash vanilla extract, or to taste
  • 2 ounces cream cheese, softened
  • 2 tablespoons white sugar
  • 0.5 teaspoon vanilla extract
  • 0.25 cup cold heavy whipping cream
Instructions:
  • Preheat the oven to a cozy 325 degrees F (165 degrees C) and outfit 12 muffin cups with paper liners.
  • Using an electric mixer, beat eggs and 1/3 cup of white sugar in a bowl until pale and fluffy. Mix in milk and a dash of vanilla extract. In a separate bowl, whisk together cake flour, baking powder, and salt. Stir the dry mixture into the egg mixture.
  • In a separate bowl, use an electric mixer to beat egg whites and cream of tartar until soft peaks form. Gradually add remaining sugar and beat until glossy and firm. Gently fold the egg whites into the flour mixture until just combined. Spoon batter into muffin cups and bake.
  • Bake until a toothpick inserted in the center comes out clean, about 12 to 15 minutes. Allow to cool slightly before serving.
  • Combine evaporated milk, 1/2 cup cream, sweetened condensed milk, and a dash of vanilla extract in a bowl. Poke holes in the cupcakes and generously spoon 4 to 5 spoonfuls of the milk mixture over each cupcake.
  • In a bowl, whip together cream cheese, 2 tablespoons of white sugar, and 1/2 teaspoon of vanilla extract until smooth. Gradually add 1/4 cup of cold cream and beat until stiff peaks form. Frost each cupcake generously.
