Whip up a tropical twist on tres leches cake using cake mix, pineapple, and coconut cream for a delicious pina colada-inspired treat.
Ingredients:
  • 1 (18.25 ounce) box yellow cake mix without pudding
  • 3 eggs
  • 1.25 cups water
  • 1 (8 ounce) can crushed pineapple
  • 1 (15 ounce) can cream of coconut
  • 1 cup heavy whipping cream
  • 0.25 cup white sugar
  • 1 tablespoon toasted flaked coconut, or as desired
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch cake pan.
  • Combine yellow cake mix, eggs, water, and vegetable oil in a bowl until just mixed; beat on medium speed with an electric mixer for 2 minutes. Fold in crushed pineapple, then pour batter into the cake pan.
  • Bake in the preheated oven for 30 to 40 minutes until the cake is lightly browned and a toothpick inserted into the center comes out clean or with moist crumbs. Remove cake from oven.
  • Combine creamy coconut with milk in a bowl, whisk until velvety, then generously drizzle over the warm cake. Let the cake cool completely.
  • Combine cream and sugar in a mixing bowl. Use an electric mixer to beat until soft peaks form. Spread whipped cream on top of the cake and garnish with toasted coconut.
