Tri Tip Roast

Herb-crusted tri-tip roast, marinated in mustard and red wine, cooked to juicy perfection.
Ingredients:
  • 1 (1 1/2 pound) beef tri tip roast, trimmed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon dried marjoram
  • 1 teaspoon dry mustard
  • salt and ground black pepper to taste
  • 0.33333334326744 cup red wine
  • 1 tablespoon olive oil, or as needed
Instructions:
  • Massage the beef with fragrant thyme, basil, marjoram, dry mustard, salt, and black pepper until well coated; then place it in a resealable plastic bag. Seal the bag and refrigerate for 8 hours to overnight. Add red wine to the bag 4 hours before cooking.
  • Preheat the oven to 450°F (230°C) and generously coat the bottom of a roasting pan with olive oil before adding the beef.
  • Roast in a hot oven for 15 minutes, then lower the temperature and continue cooking until slightly pink in the center, about 20-25 minutes more. Use a thermometer to check that the center reaches 140°F (60°C).
  • Allow to rest for 5-10 minutes before thinly slicing against the grain for optimal tenderness.
