Decadent and fudgy cookies that stay fresh for a week - if you can resist them that long!
Ingredients:
  • 190g (1 1/4 cups) plain flour
  • 40g (1/4 cup) self-raising flour
  • 50g (1/2 cup) cocoa powder
  • 200g (1 cup, firmly packed) brown sugar
  • 200g good-quality dark chocolate, chopped
  • 120g unsalted butter, at room temperature, cubed
  • 2 eggs, lightly whisked
  • 95g (1/2 cup) Milk Chocolate Bits
  • 95g (1/2 cup) White Chocolate Bits
  • Ice-cream (optional), to serve
Instructions:
  • Prepare 2 baking trays by lining them with non-stick baking paper.
  • Preheat your oven to 180°C. In a large bowl, sift the flours and cocoa powder, then stir in the brown sugar to create a well in the center.
  • In a medium saucepan over medium-low heat, melt the chocolate and butter together, stirring until smooth. Allow the mixture to cool slightly for about 5 minutes before proceeding.
  • Combine the cooled chocolate mixture and eggs with the dry ingredients using a wooden spoon until fully mixed. Stir in all the chocolate chips until evenly distributed with the spoon.
  • Form heaping tablespoons of the mixture into balls, spacing them 8cm apart on the lined trays. Flatten each ball using your fingers until about 1.5cm thick.
  • Bake in a preheated oven, switching trays halfway, until cookies are cooked through, which should take 15-18 minutes.
  • Take out from the oven and let it cool on the trays for 5 minutes before moving them to wire racks to cool thoroughly.
  • Place a scoop of ice-cream between two cookies to make a delightful sandwich, if preferred.
