Triple chocolate ice-cream sandwiches

Easily whip up these delicious ice cream sandwiches with kid-friendly shortcuts.
Ingredients:
  • 60g (1/3 cup) dark chocolate melts
  • 60g (1/3 cup) hundreds and thousands
  • 16 choc-chip biscuits
  • 8 scoops chocolate-flavoured ice-cream
Instructions:
  • Melt the chocolate in a heatproof bowl set over a saucepan of simmering water, ensuring the bowl doesn't touch the water. Stir occasionally until smooth and fully melted.
  • In a shallow bowl, spread the hundreds and thousands. Dip the tops of half the biscuits into the melted chocolate, then coat them with the hundreds and thousands. Place the biscuits on a baking tray and freeze for 5 minutes to set.
  • Arrange the leftover biscuits, base-side up, on a clean work surface. Spoon the ice-cream onto the biscuit bases, then sandwich with the chocolate-coated biscuits. Serve right away.
