Cheesy veggie ravioli ready in just 40 minutes, a delicious Italian-inspired family dinner.
Ingredients:
  • 1 package (9 oz) refrigerated cheese-filled ravioli
  • 2 large tomatoes, chopped (2 cups)
  • 1 small onion, chopped (1/4 cup)
  • 1/2 cup sliced fresh mushrooms (1 1/2 oz)
  • 1/4 cup dry red wine or chicken broth
  • 1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 clove garlic, finely chopped
  • 1/2 cup ricotta cheese
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • Preheat the oven to 325°F. Prepare the ravioli according to package instructions.
  • In a 10-inch skillet, sauté the remaining ingredients (excluding the cheeses) over medium-high heat for about 5 minutes, stirring frequently, until the tomatoes are soft.
  • In a dry 8-inch square (2-quart) glass baking dish, arrange the ravioli. Spread a layer of creamy ricotta cheese on top. Pour the flavorful tomato mixture over the ravioli. Sprinkle generously with Parmesan cheese. Bake uncovered for 20 to 25 minutes until perfectly heated through.
