Tropical coconut bliss bites

Whip up these guilt-free, gluten-free bliss bites for a summer sweet treat!
Ingredients:
  • 150g dried sweetened 
pineapple
  • 120g macadamias
  • 1 1/2 passionfruit, 
pulp removed
  • 22.40 gm coconut flour
  • 33.60 gm coconut oil
  • 30.00 ml white chia seeds
  • 35g (1/3 cup) desiccated 
coconut
  • 40.00 ml white chia seeds, extra
Instructions:
  • In separate bowls, soak the pineapple and macadamias in cold water for 2 hours to soften. Drain and pat dry with paper towel.
  • Blend the pineapple and macadamias until smooth. Mix in the passionfruit pulp, coconut flour, coconut oil, chia seeds, and 2 tablespoons of desiccated coconut until well combined. Keep blending until the mixture forms a cohesive dough.
  • Sprinkle leftover desiccated coconut and extra chia on a plate. Line an airtight container with baking paper. Roll the pineapple mixture into tablespoon-sized balls, then coat them with the coconut mixture. Place the balls in the container. Repeat to make 18 balls. Chill in the fridge for 3 hours until firm. Store in the fridge for up to 5 days in an airtight container.
