Creamy dairy-free quinoa dessert with coconut and mango transports you to a tropical paradise in every bite.
Ingredients:
  • 2 cups water
  • 0.25 teaspoon salt
  • 1 cup uncooked whole grain quinoa, well rinsed
  • 1 (14 ounce) can coconut milk
  • 0.5 cup granulated sugar
  • 3 eggs
  • 0.25 cup lime juice
  • 2 teaspoons finely grated lime zest
  • 2 teaspoons vanilla extract
  • Gay Lea Real Coconut Whipped Cream
  • Chopped fresh mango
  • Toasted coconut
Instructions:
  • In a medium saucepan with a snug lid, bring water and salt to a boil over medium heat. Stir in quinoa, cover, and simmer over low heat for 15 minutes or until liquid is absorbed.
  • Whisk together coconut milk, sugar, eggs, and lime juice. Stir mixture into quinoa. Cook over medium heat, stirring constantly for 5 to 7 minutes until thickened. Remove from heat and mix in lime zest and vanilla.
  • Allow the pudding to cool to room temperature, then refrigerate until completely chilled. It can be stored in a covered container in the refrigerator for up to 3 days.
  • Serve the indulgent mixture in bowls topped with luscious coconut whipped cream, fresh mango slices, and crispy toasted coconut for an exquisite finish.
