Tropical Quinoa Salad

Refreshing quinoa salad with sweet dried fruits and coconut.
Ingredients:
  • 1 cup uncooked quinoa
  • 2 cups water
  • 1 bag (6 oz) dried pineapple, chopped (about 1 cup)
  • 1 bag (5 oz) dried mango, chopped (about 1 cup)
  • 1 bag (2 oz) chopped macadamia nuts (about 1/2 cup)
  • 1/2 cup sweetened dried cranberries
  • 2 tablespoons orange marmalade
  • 1/4 cup orange juice
  • 1/4 cup flaked coconut
  • 10 leaves Bibb lettuce
Instructions:
  • In a 2-quart saucepan, bring quinoa and water to a boil. Reduce heat to low, cover, and cook for 10 to 15 minutes until water is absorbed.
  • In a large bowl, combine all ingredients except coconut and lettuce. Add quinoa and mix well. Chill in the refrigerator for at least 1 hour before serving.
  • Toast coconut in a dry heavy skillet over medium-low heat for 6 to 10 minutes, stirring often until it starts to brown, then stir constantly until light brown. Let it cool before using.
  • Place a generous 1/2 cup of salad onto each lettuce leaf and top with a sprinkling of toasted coconut for added crunch and flavor.
