Quinoa salad with pineapple, coconut, mango, macadamia nuts, and chutney - a vibrant tropical side dish.
Ingredients:
  • 0.5 cup uncooked quinoa, rinsed
  • 0.25 cup chopped dried pineapple
  • 0.25 cup chopped dried mango
  • 0.25 cup sweetened coconut flakes
  • 0.25 cup dry-roasted macadamia nuts, chopped
  • 1 tablespoon hot mango chutney
  • 2 tablespoons regular mango chutney
Instructions:
  • Combine quinoa and water in a saucepan over medium heat, bringing it to a boil. Cover, simmer until all water is absorbed (10-12 minutes). Remove from heat, and stir in dried pineapple, dried mango, coconut flakes, macadamia nuts, hot and regular mango chutney until fully mixed. Serve hot.
