Prepare vibrant, portable jars with protein, fiber, and two servings of fruit for a convenient and nutritious on-the-go meal.
Ingredients:
  • 187.50 ml unsweetened low-fat Greek yoghurt
  • 125.00 ml chopped pineapple, divided
  • 125.00 ml chopped mango, divided
  • 1 Weet-Bix™ wheat biscuit, crushed
  • Pulp from 1/2 fresh passionfruit
  • 40.00 ml seeds or chopped nuts
  • 6.80 gm maple syrup or honey, optional
Instructions:
  • Blend together half of the pineapple and half of the mango with the yogurt until it forms a slightly chunky puree, or alternatively, mash the fruits with a fork and fold into the yogurt.
  • Gently incorporate crushed Weet-Bix wheat biscuit, fresh passionfruit pulp, and your choice of seeds or nuts.
  • Transfer the mixture into a jar, sprinkle the rest of the fruit on top, and add a drizzle of syrup or honey, if desired.
