Indulge in a delightful piña colada yogurt coffee cake topped with tropical fruit and a dusting of powdered sugar - a delectable treat!
Ingredients:
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 container (6 ounces) Yoplait® Original yogurt piña colada
  • 1/2 cup vegetable oil
  • 2 eggs, beaten
  • 1 can (8 ounces) tropical fruit salad, well drained
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 2 tablespoons powdered sugar
Instructions:
  • - Preheat oven to 350°F and lightly grease the bottom of an 8-inch square pan with cooking spray. - In a large bowl, combine 1 1/2 cups flour, 1/2 cup sugar, baking powder, baking soda, and salt. - Gently fold in yogurt, oil, and eggs until just combined. - Chop fruit salad and toss it with 2 tablespoons of flour to coat. - Fold the fruit into the batter and spread it into the prepared pan.
  • Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out clean. Allow to cool on a wire rack for 10 minutes.
  • Dust warm coffee cake with powdered sugar and serve immediately.
