Elevate your mayo with luxurious shaved black truffle for a decadent treat.
Ingredients:
  • 3 egg yolks
  • 11.80 gm Dijon mustard
  • 150ml light olive oil
  • 100ml sunflower oil
  • 50ml truffle oil (see note)
  • 42.00 gm lemon juice
  • 1 small black truffle (bottled, frozen or fresh - optional)
Instructions:
  • In a blender, blend together egg yolks, mustard, salt, and pepper until combined. Gradually pour in combined oils while blending until a thick emulsion forms. Add lemon juice and warm water to thin out the mixture. Chill for up to 2 days. Just before serving, stir in freshly shaved truffle if desired.
