Family favorite cold macaroni salad with a special touch of peas, inherited from grandma.
Ingredients:
  • 8 ounces uncooked elbow macaroni
  • 2 dill pickles, chopped
  • 6 ounces Colby-Jack cheese, cubed
  • 1 (5 ounce) can albacore tuna in water, drained and flaked
  • 0.5 cup light mayonnaise
  • 0.5 teaspoon prepared yellow mustard
  • 1 teaspoon dill pickle juice
Instructions:
  • Bring a saucepan of salted water to a boil, then cook the macaroni for 7 minutes until tender. Rinse under cold water, drain, and pat dry with paper towels.
  • Combine macaroni, pickles, cheese, tuna, mayonnaise, and mustard in a large bowl. Season with pickle juice, salt, and pepper. Chill in the fridge for at least 30 minutes before serving.
